Method
- Preheat the oven to 350°F. Prepare a lightly greased 9x13-inch baking dish.
- In a large bowl, mix the mashed banana, eggs, milk, maple syrup, vanilla, cinnamon, baking
powder, and salt. Add the oats then stir. Lastly, mix in the strawberries. - Transfer the mixture slowly into the greased baking dish. Bake until oatmeal is set, 30-40 minutes. To check, insert a toothpick in the center. It should come out clean, not wet.
- Let it cool for 5 minutes. If preferred, top with additional strawberries before serving.
