Ingredients

1 Large
Whole wheat tortilla (burrito sized)
3 tbsp
Greek Yogurt
1.75 Ounce
Feta Cheese (mashed to a smooth paste with Greek yogurt)

Tomato (chopped into small cubes)

Cucumbers ((8-1/4"), cubed)

Black Olives (chopped)

Greek Pepper ((approx 2-3/4" long, 2-1/2" dia), diced)

Dried Oregano

Method

  1. Ready all the ingredients. Place a tortilla on a board or other clean work surface, then spread with the feta cheese and yogurt mixture. Leave a small border clear around the edge.
  2. All over the cheese, sprinkle the salad veggies evenly, then sprinkle over the oregano and pepper.
  3. Tightly roll the tortilla up, then wrap it in plastic wrap. Pop into the refrigerator for about half an hour to firm up a bit.
  4. Unwrap the tortilla and chop it into about 8 even rounds. Layout flat on a plate, to serve.
