Method
- Set the oven to 375° F. Place a single layer of bread slices in a 15x10-inch pan with sides. Lightly brush 2 tablespoons of oil on top of the slices. Bake until light brown and crispy, 8 to 10 minutes.
- Heat the remaining oil in a 10-inch nonstick skillet over medium-high heat, 1 to 2 minutes. Stir in the bell peppers, onion, garlic, salt, oregano, and thyme. Cook with occasional stirring until
vegetables are crisp-tender, 3 to 5 minutes. - Transfer the vegetables to a bowl then stir in vinaigrette and olives.
- Place 1 teaspoon of the vegetable mixture on top of a bread slice. Sprinkle with cheese and parsley before serving.
