Marinated Artichoke Hearts (Use 1 (6 ounce) jar marinated artichoke hearts, drained and quartered.)

Method
- In a skillet, heat olive oil over medium heat. Cook and cook garlic in the hot oil, stirring, for about 2 minutes until fragrant and beginning to brown.
- Add the rice, and cook until rice is hot and grains are separate, stirring occasionally for 2 more
minutes. - Place in the spinach and cook until heated entirely for 3 more minutes.
- Add in the artichoke hearts and roasted red peppers, and cook for 2 minutes.
- Stir in feta cheese. Remove from heat, and serve.
