Ingredients

Canola Oil

Onion (peeled and thinly sliced)

Spinach
0.25 Cup
Lemon Juice

Garlic (grated)

Method

  1. Cooking the Caramelized Onions: Heat oil in a deep pan over medium-high heat.
  2. Saute onions, salt, and pepper. Reduce heat to medium and continue to cook until translucent. Set aside.
  3. Cooking the Greens: Boil the greens to the pot and simmer until bright green and wilted, about 3-4 minutes. Transfer the greens to a large bowl and let cool.
  4. In a small bowl, mix together lemon juice, olive oil, garlic, salt, and pepper; set aside.
  5. Make sure there is no excess liquid before putting the vinaigrette.
  6. Put the lemon vinaigrette over the greens and mix well to combine. Season to taste. Scatter the greens in a thin layer on a large platter. Put the caramelized onions and serve.
