Method
- Cooking the Caramelized Onions: Heat oil in a deep pan over medium-high heat.
- Saute onions, salt, and pepper. Reduce heat to medium and continue to cook until translucent. Set aside.
- Cooking the Greens: Boil the greens to the pot and simmer until bright green and wilted, about 3-4 minutes. Transfer the greens to a large bowl and let cool.
- In a small bowl, mix together lemon juice, olive oil, garlic, salt, and pepper; set aside.
- Make sure there is no excess liquid before putting the vinaigrette.
- Put the lemon vinaigrette over the greens and mix well to combine. Season to taste. Scatter the greens in a thin layer on a large platter. Put the caramelized onions and serve.
