Ingredients

Yellow Onion (chopped)

Carrot ((7-1/4" to 8-/1/2" long))
2 Clove
Garlic (minced)

Coriander Seeds
1 tsp
Turmeric
2 tsp
Cumin
1 Cup
Lentils (rinsed)
6 Cup
Vegetable Stock ((broth))
2 Dash
Sea Salt
2 Dash
Black Pepper

Method

  1. Add the olive oil, onion, and carrots all to a large pot and cook over medium heat for 5 minutes
    until the vegetables begin to soften.
  2. Add the garlic, coriander, turmeric, and cumin and continue to cook for 2 minutes until fragrant.
  3. Add the lentils and vegetable broth and simmer for 20-25 minutes until the lentils are soft. Season
    with salt and pepper.
