Ingredients

Salmon (fillets, skin removed)
40 g
Bread crumbs (whole meal)
3 tsp
Pesto
1 tsp
Olive Oil
4 Cup
Spinach

Method

  1. Spread one teaspoon of the pesto on the top of the salmon fillets.
  2. Mix the breadcrumbs with the remaining pesto.
  3. Carefully place the breadcrumb mixture on top of the salmon fillets. It should stick to the pesto
    topping.
  4. Heat the grill to moderate heat.
  5. Gently warm the oil in a non-stick frying pan, that is oven-proof.
  6. Use a pallet knife to pick up the fillets and carefully place them in the pan.
  7. Cook on a moderate heat for about 4-5 minutes.
  8. Cook for a further 3-5 minutes under the grill taking care to ensure that the top does not burn.
  9. Serve with fresh spinach.
