Method
- Cut the steak into 1/2-inch thick slices across the grain.
- In a bowl, whisk together the soy sauce, sugar, cornstarch, and ginger until the sugar has dissolved and the mixture is smooth. Put the steak slices in the marinade and stir until well-coated.
- Heat vegetable oil in a wok or large skillet over medium-high heat and put 1/3 of the steak strips in the hot oil. Cook and mix until beef are well-brown, about 3 minutes, and remove the beef from the wok to the bowl. Repeat the remaining beef again, then set aside the cooked beef.
- Return all the beef to the hot wok and stir in the onion. Toss together the beef and the onion until the onion starts to melt, about 2 minutes, then stir in the green pepper. Cook and stir until the pepper has turned green and is soft, about 2 minutes, then add the tomatoes, stir all together and serve.
