Method
- First, cook the lentils and drain off excess liquid. Set aside.
- Over medium heat, heat a large skillet and add olive oil. Add and saute onions until tender. Season
with salt and pepper. - Then, add cooked lentils, carrots, maple syrup, paprika, garlic powder, salt, pepper and tomato
puree. Stir occasionally, around 5-10 minutes. - Serve with shredded red cabbage and sliced green onions.
