Ingredients

2 tbsp
Olive Oil

Onions (minced)

Carrots (grated)
2 tbsp
Maple Syrup
1 tsp
Paprika
1 tsp
Garlic Powder
1 Dash
Sea Salt
1 Dash
Black Pepper

Tomato Puree

Red Cabbage

Spring Onion ((Scallions), chopped)

Lentils

Water (for cooking lentils)

Method

  1. First, cook the lentils and drain off excess liquid. Set aside.
  2. Over medium heat, heat a large skillet and add olive oil. Add and saute onions until tender. Season
    with salt and pepper.
  3. Then, add cooked lentils, carrots, maple syrup, paprika, garlic powder, salt, pepper and tomato
    puree. Stir occasionally, around 5-10 minutes.
  4. Serve with shredded red cabbage and sliced green onions.
