Ingredients

Turkey (minced)

Onion ((2-1/2" dia), finely chopped)

Yellow Pepper (deseeded and thinly sliced)

Tomato (canned, chopped)

Kidney Beans (canned)
1 tbsp
Lime Juice
2 tbsp
Coriander (roughly chopped, extra for garnish)

Method

  1. Preheat the oven to 200°C/180°C fan/gas 6. In an oiled large non-stick frying pan, saute the turkey, onion, and pepper for 5 minutes, stirring frequently and breaking up the mince. Stir in the chopped tomatoes and kidney beans.
  2. Let it simmer for 10 minutes, stirring frequently. Turn the heat off and mix in the lime juice,
    coriander, and seasoning.
  3. Lightly oil a shallow ovenproof dish and put in 1 tortilla with a couple of spoonfuls of the turkey mixture on top. Roll up and position on the side of the dish. Repeat with the other tortillas—place down the sides of the dish any remaining turkey mixture.
  4. Top them with the cheese and cook in the oven for 15 minutes. Sprinkle the coriander over and
    serve with a salad.
