Red Pepper (red bell pepper, cut into strips)

Light coconut milk

Method

  1. In a skillet, heat the oil over high heat and cook the curry paste for about 30 seconds.
  2. Add the chicken and cook for 3 minutes.
  3. Add the onion, bell pepper, lemon zest, coconut milk, fish sauce, and lemon juice; wait until the
    chicken is cooked through, 5 to 7 minutes.
  4. Top the dish with cilantro then stir and serve.
