Method
- In a skillet, heat the oil over high heat and cook the curry paste for about 30 seconds.
- Add the chicken and cook for 3 minutes.
- Add the onion, bell pepper, lemon zest, coconut milk, fish sauce, and lemon juice; wait until the
chicken is cooked through, 5 to 7 minutes. - Top the dish with cilantro then stir and serve.
