Method
- Preheated oven to 400oF. Combine the seasoning ingredients in a small bowl. Set aside.
- In another mixing bowl, combine the baby spinach, cream cheese, feta, and mozzarella. Use your hands to massage the ingredients until the mixture turns into a thick paste.
- Use a knife to slit along each chicken breast's sides, creating pockets for stuffing.
- Fill each pocket with a quarter of the spinach stuffing and use toothpicks to prevent spillage.
- Apply a liberal amount of the seasoning mixture onto the chicken, then brush with olive oil.
