Method
- Prepare the butter beans for use, blanch them in water for 4 minutes then drain.
- Sprinkle the beans with the olive oil then mix with the garlic and olives.
- Heat a pan and cook the beans for 5 minutes.
- Spoon the coarsely chopped herbs through the beans, season with salt and pepper, and put into a
bowl. Sprinkle with watercress.
