Ingredients

1000 g
Potato (fresh, chopped)
3 tsp
Paprika
2 tsp
Olive Oil

Onions (fresh, sliced)
2 Clove
Garlic (crushed)
800 g
Tomato (canned, chopped)
300 g
Chicken (cooked, shredded)
140 g
Pepper (roasted, sliced)
0.25 Cup
Olives (pitted and chopped)

Method

  1. Preheat the oven to 200°C/fan 180°C/gas 6. Bring the potatoes to boil and let them cook until
    tender, 15-20 minutes. Drain and transfer back to the pan, mash. Mix in some seasoning and 2
    teaspoons of paprika.
  2. While cooking the potatoes, heat oil in a large pan. Saute the onions and garlic until tender, a few minutes. Mix in the remaining paprika. Stir for 1 minute, place in the tomatoes, and bring to a simmer. Place into a large ovenproof dish, add in the chicken, peppers, olives, and some seasoning. Stir.
  3. Spoon over the mash. Let it cook in the oven until the mash is golden on top and the sauce starts to bubble, 15 minutes.
