Method
- Preheat the oven to 200°C/fan 180°C/gas 6. Bring the potatoes to boil and let them cook until
tender, 15-20 minutes. Drain and transfer back to the pan, mash. Mix in some seasoning and 2
teaspoons of paprika. - While cooking the potatoes, heat oil in a large pan. Saute the onions and garlic until tender, a few minutes. Mix in the remaining paprika. Stir for 1 minute, place in the tomatoes, and bring to a simmer. Place into a large ovenproof dish, add in the chicken, peppers, olives, and some seasoning. Stir.
- Spoon over the mash. Let it cook in the oven until the mash is golden on top and the sauce starts to bubble, 15 minutes.
