Method
- In a large pot, add parboiled rice, vegetable stock, and salt. Cook over medium heat for 5 to 10
minutes or until all liquid evaporates and rice is tender. Fluff rice and set aside. - Heat olive oil in large wok and sauté onion, scallions, and mixed vegetables for 5 minutes or
until tender. Season with green curry powder, stock cube, thyme, and salt. Stir-fry well and
simmer for 1 to 2 minutes or until the flavors combine well. - Dish food and serve warm.
