Ingredients

2 Cup
Rice (parboiled)
½ Cup
Vegetable Stock
2 tbsp
Green Curry Powder
1 Cup
Onion (chopped)
2
Scallions (chopped)
1 Cup
Mixed Vegetables ((like carrots, sweet corn and sweet peas), chopped)
1 tsp
Green Curry Powder (Caribbean/Jamaican)

Vegetable Stock Cubes
½ tsp
Thyme
4 Dash
Salt (or to taste)

Method

  1. In a large pot, add parboiled rice, vegetable stock, and salt. Cook over medium heat for 5 to 10
    minutes or until all liquid evaporates and rice is tender. Fluff rice and set aside.
  2. Heat olive oil in large wok and sauté onion, scallions, and mixed vegetables for 5 minutes or
    until tender. Season with green curry powder, stock cube, thyme, and salt. Stir-fry well and
    simmer for 1 to 2 minutes or until the flavors combine well.
  3. Dish food and serve warm.
