Ingredients

8 Medium
Potato ((2+-1/4" to 3-1/4" dia.))
2 tbsp
Olive Oil
0.5 tsp
Sea Salt
4 Clove
Garlic (minced)
2 tsp
Red Chilli Flakes
1 Cup
Coriander Leaves ((cilantro), chopped)

Lemons (wedge or slice (1/8 of one 2-1/8" dia lemon))

Method

  1. Preheat the oven to 450°F and line a sheet pan with parchment paper.
  2. Place the potatoes on the baking sheet in one layer, drizzle half of the olive oil and season with
    salt. Roast until the potatoes reach a golden brown color and crisp, about 30 minutes, flipping halfway
    through.
  3. Meanwhile, heat the remaining olive oil in a small pan. Add the garlic, 1 teaspoon of the crushed
    red pepper, and half the cilantro. Sauté until the garlic is golden in color, about 2 minutes; remove
    from heat and set aside.
  4. Once the potatoes are roasted, transfer the garlic mixture on top of the potatoes and toss with the
    remaining cilantro and the red pepper flakes.
  5. Squeeze of lemon juice on top upon serving.
