Ingredients

1 Pound
Ripe Tomato (chopped)
0.5 Cup
Onion (finely chopped)
6
Anchovy fillets (minced)
2 Clove
Garlic (minced)
1 tbsp
Tomato Paste
4 Fillet
White fish
4 Slice
Country Bread
0.5 Cup
Basil ((fresh), sliced)
0.5 tsp
Salt
0.25 tsp
Black Pepper
4 tbsp
Olive Oil

Method

  1. Over medium heat, heat a saucepan and add. Add 1 tablespoon of olive oil and saute onions and anchovies. Sauté for 2 minutes, then add the garlic, tomatoes, and tomato paste. Season with salt and pepper.
  2. Bring it to a boil and reduce heat to a simmer. Simmer 10-15 minutes.
  3. Meanwhile, pat the fish dry with a paper towel. Then lightly oil, salt, and pepper on both sides. Place on the baking sheet and roast for 6-8 minutes, depending on the thickness of the fish.
  4. Brush the bread with remaining olive oil and toast in the oven for 3-5 minutes.
  5. Assemble the bruschetta and top each bread slice with a fish fillet. Finish it with tomato sauce on top and fresh basil ribbons over the fish. Serve immediately.
