Ingredients

Kale

Cucumber (very thinly sliced (8-1/4"))
0.5 Medium
Onion (peeled and very thinly sliced (2-1/2" dia))
2 Ounce
Pine Nut (toasted)
3 tbsp
Olive Oil
1 tbsp
Lemon Juice
1 tsp
Dijon Mustard
1 Clove
Garlic (minced)
2 Dash
Sea Salt
2 Dash
Black Pepper

Method

  1. To Make The Dressing: Whisk all together, olive oil, lemon juice, mustard, garlic, salt and pepper in
    a bowl until combined. Use immediately or refrigerate in a sealed container for up to 3 days.
  2. To Make The Salad: Combine kale, cucumber, onion, pine nuts in a large salad bowl and toss until
    evenly combined. Serve immediately and enjoy!
