Method
- In a large pot over medium-high heat, sauté the onion in olive oil for 5-7 minutes until lightly
browned. - Add the garlic and cook for 30 seconds. Stir in the celery, carrots, little potatoes, veg broth, water, and Italian seasoning. Bring to a boil, then turn down flame to medium-low heat. Allow simmering, slightly covered for 10 minutes.
- Tip in the turkey meat and cook for another 10 minutes.
- Pour over the cream, stir, and season with salt and pepper.
