Method
- Over medium heat, heat a large saucepan and add olive oil. Add and sauté onions, garlic, and
ginger for 5 minutes or until fragrant. - Add soaked mushrooms, broth, coconut aminos, cinnamon stick, and pepper. Bring to a boil. Add
chicken and reduce heat, allow it to simmer for 20 minutes. - Add in fennel and scallions and cook for 5 minutes. Add pak choy and cook for 3 minutes or until it
just wilted. - Discard the cinnamon stick and serve the soup into bowls while still hot.
